A new taste of California's Central Coast has arrived in Portola. Local couple Kimberly Schaff and Nick Baylock have opened Fire & Oak Barbecue at 197 W. Sierra St., directly across from Ace Hardware. The new barbecue stand specializes in authentic Santa Maria-style barbecue, featuring meats cooked over a traditional red oak wood fire that imparts a distinctive smoky flavor while preserving the meat's natural juiciness. Santa Maria-style barbecue originated on California's Central Coast and is known for its simple seasoning, wood-fired cooking, and emphasis on quality cuts of meat grilled over red oak. Fire & Oak brings that time-honored tradition to the Portola community with freshly prepared, wood-grilled specialties. In addition to serving breakfast, lunch, and dinner, Fire & Oak Barbecue also offers catering for weddings, corporate events, private parties, family gatherings, and other special occasions. Fire & Oak Barbecue is open Thursday through Sunday for breakfast, lunch, and dinner, although popular menu items often sell out, so arriving early is recommended.
